After breakfast at Buswell’s Hotel, and some final goodbyes to our tour mates, Colleen and I headed out of Dublin bound for Ballyshannon. Along the route we spotted an exit to Kells, having seen the Book of Kells in Dublin we thought it a worthwhile side trip to see the town that gave substance to their spiritual vision.
After visiting the Church, Colleen and I decided we needed caffeine to sustain us on the road. We stumbled into the Pebbles Coffee Shop, ordered our coffees and there it sat amongst the wonderful array of cakes and sweets, a rich creamy banofie 
pie. A simple rich biscuit base layered with sliced banana covered in a sweet gooey caramelised condensed milk, top with whipped cream and some banana slices, biscuit crumbs and drizzle with chocolate sauce for a extra kick.
How could we resist this tempting treat?
We declared an early light lunch, and shared this piece of banofie pie with our coffee. Pebbles Coffee Shop had created a magnificent pie, we tried banofie pie at a variety of cafes and restaurants in Ireland but none matched this one in Kells.
